La Avi is an exclusive Organic-certified offering created for Covoya by our friends at BonCafe. The name "La Avi" derives from a type of wasp used for broca control on coffee farms. Within their extensive network in Honduras, BonCafe will purchase the entire harvests of organic-certified smallholder farmers, who are generally situated 1400 - 1800 masl and growing the prevalent specialty varieties of the area: Catuai, Bourbon, Lempira, Pacas, and IHCAFE 90. Each farmer's harvests are graded and cupped for quality, then classified into three tiers, with the farmers receiving premiums for each tier on top of the base price paid for the coffee. The highest scoring lots are sold as individual microlots, while the lots in the next tier are combined into offerings like La Avi, which constitute high-quality, approachable coffees suitable for a variety of uses.

As we grow we will work within our supply chain to become carbon neutral and minimize our impact on the Earth. Our coffee (and our forthcoming Cold Brew) are available in 100% recyclable cans since most “recyclable” coffee packaging can only be processed inexpensive, specialized facilities.
